Fresh Fava Beans in Olive Oil

There truly is something amazing about dishes cooked in copious amounts of olive oil, especially in the summer. I think the heat tends to keep people out of the kitchen, searching for lighter fare and more vegetarian ideas. Legumes, particularly fresh ones, can be found in abundance all over the place. Especially in the #mediterranean and all along the #Aegean coast.


Here is a perfect application for Fresh Fava Beans in Olive Oil. It is surprisingly easy to prepare and easy to pair with other mezze or just on its own for a light meal. It can be served either hot or cold. Here is what you need:



1 LB of fresh fava beans, hulled

1 small onion, diced

4 cloves fresh garlic, minced

1/4 tsp aleppo pepper

1/4 tsp sweet paprika

1/4 c nice olive oil

fresh dill - a few fronds

fresh mint, julienned

juice of 1 lemon

salt and pepper TT


  1. Start off by blanching the favas in heavily salted water, then shock them in ice water. This will help to remove the tough outer skin on each bean.

  2. in a heavy bottomed sauté pan or pot, heat up olive oil

  3. add diced onion with some salt and soften over medium heat.

  4. Add garlic and cook for a few minutes. Add favas, spices and lemon juice.

  5. Cover and cook for 10 minutes or until the beans are tender. Add fresh herbs and remove from heat.
