The best #hummus ever!
This is the best hummus recipe ever and is perfect anytime, even served warm for breakfast! In Israel, hummus is served any time of day with, chickpeas, pickles, boiled eggs or other garnishes. Here, I just garnish with a bit of really nice olive oil and et Oliva Za'atar Spice Blend. You can use canned chickpeas, but I find the old fashioned way the best. Just remember to get your peas soaking overnight!
Here is what you need:
soaking time: overnight
cooking time: 1 hr
preptime: 15-20 minutes
serves: 4-6 with other sides
1 c dried chickpeas, soaked overnight in cool water with 1/2 tsp. baking soda
2 c tahini paste
1 lemon, juiced
4 cloves of garlic, chopped
salt and pepper to taste
1 tsp. za'atar
drain the chickpeas from the soaking water and rinse. In a large pot, add the peas and enough water to completely submerge the peas. boil until very tender. You may have to constantly add water to keep it from drying up. Oh and DO NOT ADD SALT, otherwise you will just be cooking rocks.
After peas are done, start moving them over to a #cusinart. Process with some of the cooking water and garlic until very smooth.
Add tahini, lemon juice, olive oil and salt and pepper. I add a nice pinch of za'atar at this point too.
Plate in a serving dish and garnish with olive oil and Za'atar
