#Lemon Oregano Potatoes are classic in any #Mediterranean restaurant - they are also super easy and can be made ahead of time. Yukon Gold potatoes are the best to use because their waxy texture can withstand a heavy roast without falling to pieces. You can serve these with chicken, lamb or fish and they cary over well to the next day!
Here is what you need:
Preheat oven 400 F
prep time: <15 minutes
cook time: 30-40 minutes
serves 2 along with other sides
2 large yukon gold potatoes, washed and cut into wedges
1/4 c nice olive oil
1/2 cup chicken stock - or - veg stock
fresh juice from 1 lemon
2 whole garlic cloves
1 cinnamon stick
1 bay leaf
a few fresh sprigs of oregano
salt and fresh pepper to taste
start by washing on wedging your potatoes. Put in a casserole or dutch oven
add remaining ingredients
roast at 400 for 30 - 40 minutes
thats it - super easy!
