Apricots are in season and perfect for this dish. Make sure to pick some that are ripe but somewhat firm. Other stone fruits such as peaches, nectarines and plums can be used as well. It is simple to make and doesn't take a long time in the kitchen. It is sure to get the oooohs and aaahs from the table! It is an easily scaleable recipe - perfect for 4 or add more fruit for 8 or more! Here is what you need:
Serves 4 along with other sides.
4-6 firm apricots, halved with stone removed
3T Salted Butter
1 garlic clove
fresh Oregano
2 TBSP et Oliva Fig and Olive Jam
2 TBSP honey to serve.
In a sauté pan, melt butter until it stops foaming. Add garlic clove and Jam and swirl around
add apricots cut side down and let slowly cook for 7-10 minuted until they caramelize. Add fresh oregano and finish with a drizzle of honey.
This is perfect served with rose wine and feta cheese, crusty bread or a roasted chicken.
