Greek Braised Greens with Tomatoes and Za'atar.

This dish is perfect served hot or cold but it always comes with a side of feta. The feta adds a salty and creamy contrast to the bright flavors of the greens. Here is what you need:

prep time: <1 hr

cooking time: <30 minutes

serves: 4 with other sides

1 large bunch of Lacinato Kale, Spinach, mustard or collard greens, cleaned and trimmed of center vein

1 medium onion thinly sliced

3 cloves garlic, thinly sliced

1 large tomato, diced

1/4 c cider vinegar

3 TBSP olive oil

salt and pepper

2 tsp za'atar

  1. heat the oil in a pot with a tight fitting lid. Add onions and garlic and soften.

  2. Add greens and cook until wilted. Add tomatoes, vinegar, salt and pepper.

  3. When greens are tender, sprinkle the za'atar on top and serve with a slice of feta cheese
