Turkish braised Green beans
This is one of my favorite dishes and can be made ahead of time. It's part of a family of dishes called Olive Oil dishes or 'Zeytinyağlı'. These dishes can be served hot and are perfect cold, when it is too hot outside to cook. They make a great meze or a quick dinner with a glass of wine. Serve with pilaf or crusty bread and yogurt.
Here is what you need:
prep time: <15 minutes
cook time: <25 minutes or until tender
serves: 4 with other dishes
1 1/2 - 2 lbs of trimmed and washed green beans (a package of green beans for trader joes works great ! )
1 large tomato rough chopped
1 tsp. tomato paste
1 medium onion, thinly sliced
3 cloves of garlic, chopped
1/4 c olive oil
fresh herbs such as dill, marjoram and thyme - enough chopped to make 1/4 c
salt and pepper to taste
fresh lemon and yogurt to serve
in a medium dutch oven, heat olive oil to a shimmer. Soften onions and add garlic.
Add tomatoes, tomato paste salt and pepper and fry for a few minutes.
Add washed and trimmed green beans and 3/4 c water.
cook on med low until green beans are tender. Add herbs
serve with yogurt and fresh lemon, either hot or cold.
